1 1/2 to 2 cups leftover pulled pork
2 cups Head Country Hot and Spicy BBQ Sauce
1/2 red onion, sliced
2 jalapeños, sliced
1 tsp Head Country Original Championship Seasoning
1 lb pizza dough, homemade or store bought
2 Tbsp olive oil
3 oz Monterey jack cheese, shredded
3 oz Mozzarella cheese, shredded
Garnish: sliced green onion
Step 1. Preheat the grill to high heat (about 500˚F).
Step 2. In a medium bowl, add pulled pork and 1 cup Head Country Hot and Spicy BBQ Sauce. Stir together to combine and set aside.
Step 3. In a small bowl, toss together red onion, jalapeños, and seasoning.
Step 4. Roll out pizza dough on a clean work surface. Brush olive oil on one side of the dough. Lay the oiled side down on the grill and brush the top of the dough with olive oil. Cover grill and cook 2 to 3 minutes, enough for the dough to set but not be too crispy.
Step 5. Flip dough over and top with remaining BBQ sauce. Then top with BBQ pulled pork, seasoned onion and jalapenos, and finally, the cheeses. Be sure to work quickly so all the heat doesn’t escape the grill. If you need to take your time, remove the pizza dough to top it before placing it back on the grill.
Step 6. Cover grill and cook for about 3 to 5 minutes, until the cheese is melted and crust is crispy around the edges. Remove and top with sliced green onions and a drizzle of BBQ sauce. Slice and serve.
