375 °F

1 hour and 15 minutes

Ingredients

1 Large Head of Cauliflower

Head Country Original Championship Seasoning

¼ Cup Head Country Sugar Free Sauce

¼ Cup of Unsalted Butter like Kerry’s Gold

½ Cup of Louisiana Original Wing Hot Sauce

Canola Oil and Apple Juice

Instructions

Step 1. Pre-heat the grill to 375 degrees.

Step 2. While the Grill is heating up, cut the bottom of the cauliflower root off so that it is flat and as close to the head as possible.  Take the remaining leafs off.

Step 3. Place the Whole Cauliflower head into a cast iron skillet.  Pour some Canola Oil (total of about ¼ cup) on the top of the head and use a brush to cover the entire surface.

Step 4. Put a medium coat of Head Country Original Championship Seasoning over the entire head.

Step 5. Once complete put onto the grill and cook for 1 hour and 15 min.  If possible spritz lightly with apple juice at 30 minutes, 45, and 1 hour.

Step 6. While the cauliflower is on the grill, heat the ¼ cup of butter in a bowl.  When the butter is melted combine with ¼ cup Head Country Sugar Free  Sauce and ½ Cup of Louisiana Wing Sauce.

Step 7. Make sure the sauce slightly warm before applying.  After 1 hr and 15 min, pour the sauce on the top of the head and again use the brush to apply the sauce to the entire surface.  If sauce gets on the cast iron pan that is fine. You should have about ¼ of the sauce mix left.

This Recipe was provided by Pitmaster Doug Scheiding of Rogue Cookers.

Step 8. After 5-8 minutes take the head off the grill.  Place in a serving dish and pour the rest of the sauce over the head in the cauliflower head in the cast iron skillet.
