1/2 onion, diced
1 1/2 pounds ground chuck (80 percent lean)
1 Tbsp Head Country Original Championship Seasoning
1/2 cup Head Country Peach Habanero BBQ Sauce (or use Smoky Ancho Citrus)
4 fresh sliced pineapple rings
8 slices bacon, cooked
4 hamburger buns, split and toasted
4 leaves of lettuce
Step 1 Preheat the grill to High heat, about 425˚F to 450˚F.
Step 2 In a large bowl, add onion, ground beef, and Head Country Original Championship Seasoning. Mix together with your hands until well-combined.
Step 3 Divide meat into 4 equal portions. Form into patties, about 3/4-inch thick. Use your thumb to make a 1/2-inch depression in the center. Brush the burgers on both sides with canola oil and set aside.
Step 4 Place the burgers on the grill, along with the pineapple slices. Cook for 3 to 5 minutes, flip, and cook for another 3 to 5 minutes, until desired doneness has been reached. In the last 2 minutes of cooking, brush the tops of the burgers with the BBQ sauce.
Step 5 Remove grilled pineapple slices and patties from the grill.
Step 6 To assemble the burgers, top the bottom halves of the buns with lettuce. Add patties on top. Top with 2 slices of cooked bacon each, followed by a pineapple ring. Drizzle with more BBQ sauce and top with other bun halves.
Step 7 Serve.
