2 tsp garlic powder
2 tsp onion powder
1 tsp smoked paprika
2/3 cup Raspberry Chipotle BBQ Sauce
2 tbsp olive oil
2 lbs peeled and deveined jumbo shrimp
salt and pepper to taste
Step 1. If you are using wooden skewers, soak them in water for at least 30 minutes. This will help prevent them from burning too much.
Step 2. In a small bowl, stir together garlic powder, onion powder, paprika, 3 Tbsp Raspberry Chipotle BBQ Sauce, and oil.
Step 3. Add shrimp to a large bowl and season with salt and pepper. Pour BBQ sauce mixture into the bowl and stir to coat evenly.
Step 4. Thread shrimp onto skewers, about 4 to 5 per skewer.
Step 5. Preheat the grill to High heat, about 400˚F.
Step 6. Place skewers on the grill, brush with Raspberry Chipotle BBQ Sauce, and cover. Cook for about 5 to 7 minutes total, flipping halfway through and brushing with additional sauce.
Step 7. Sprinkle with freshly chopped parsley and serve with additional BBQ sauce for dipping.
Notes:
Storing: Once cooled, store leftovers in an airtight container in the refrigerator. The shrimp will last for up to 3 days.
Reheat: Reheat grilled shrimp (removed from the skewers) in the microwave for about 30 to 60 seconds, until warm.
Note that shrimp can also be baked in the oven if you don’t have a grill or grill pan. Place skewers on a rimmed baking sheet lined with parchment paper. Broil for 2 to 3 minutes, flip, and broil for an additional 2 to 3 minutes.
