BBQ Cheese-Stuffed Bacon Meatloaf

Ingredients

1 medium white onion, chopped

3 cloves of garlic, minced

1/4 cup grated Parmesan cheese

2 cups shredded cheddar cheese

1/3 cup chopped parsley

2 eggs

1/2 cup plain breadcrumbs

1 Tbsp Worcestershire sauce

2 tsp Head Country Championship Original Seasoning

2 lbs ground beef

6 slices bacon, cooked and roughly chopped

1/2 cup Head Country BBQ Original Sauce

 
 
 
Instructions

Step 1. Preheat the oven to 350˚F. Line a rimmed baking sheet with parchment paper. 

Step 2. In a large bowl combine onion, garlic, parmesan cheese, ½ cup cheddar cheese, parsley, eggs, breadcrumbs, Worcestershire, Head Country Original Seasoning, ground beef, and bacon. Using you hands, mix everything together until just combined. Be sure not to overmix the meat or the meatloaf will dry out!

Step 3. Shape the meatloaf into a log with ⅔ of the meat mixture in the center of the prepared baking sheet. Use your fingers to make a crease down the middle and add the remaining cheddar cheese to it. Cover with the remaining meat mixture, making sure to closing the gaps and seal them well or else the cheese with leak out. 

Step 4. Spread the top of the meatloaf with ⅓ of the BBQ sauce. 

Step 5. Bake for 30 minutes. Remove from the oven and brush with another ⅓ of the BBQ sauce. Bake for another 20 to 30 minutes, until the internal temperature reaches 160˚F.

Step 6. Remove from the oven and spread with remaining sauce. Cool for 5 minutes before slicing and serving.
