Spicy Summer Guacamole

We love a good excuse to keep it simple. This guacamole is best when fresh, high-quality ingredients are allowed to do their job. Go with fresh onion, tomato, and cilantro, go in search of the avocados with just the right amount of give when pressed, and spritz the whole thing with juice straight from the lime. Our High Plains Heat adds just the right kick.


3 avocados, halved, seeded and peeled
1 lime, juiced
1/2 medium onion, diced
2 Roma tomatoes, seeded and diced
1/4 cup chopped cilantro
2 tablespoons Head Country Championship Seasoning, High Plains Heat

In a large bowl place the peeled and seeded avocados, mash with a fork or potato masher.

Mix in the Head Country Championship Seasoning.

Fold in the onions, tomatoes, cilantro and fresh lime juice.

Let sit at room temperature for 1 hour and then serve.
