Smoked Marinated Meatloaf


1 lb ground beef
1 lb pork sausage
8 strips bacon cooked and chopped
8 strips bacon uncooked
2 eggs, whisked
1/2 c. bread crumbs
1/4 c. milk
1 Tbsp. Head Country Original Seasoning
1 tsp. garlic powder
1/2 large yellow onion, chopped
1/2 c. Head Country All-Purpose Marinade


325 degrees


60 minutes


Preheat oven or smoker to 325 degrees F.

In a large mixing bowl combine all ingredients, being careful to not overwork. Shape into a loaf.

Create the bacon weave for wrapping the meatloaf.

Place the loaf on middle rack in the oven or in the smoker. Cook until the internal temperature is 165 degrees.

Remove from oven or smoker, slice and serve.
