Slow Cooker BBQ Beer Can Chicken

Slow cooker BBQ chicken is one of the most versatile dishes you can make in your kitchen. Cook it once, eat it all week in everything from tacos to baked potatoes. We threw a twist on this one, helping you to make it double as your go-to beer can chicken recipe when it’s just too hot to man the grill.

INGREDIENTS

3 pounds boneless skinless chicken breast or thighs
1 onion, chopped
2 cloves of garlic, minced
2 chipotle peppers in adobo, finely chopped
2 tsp. smoked paprika
Salt and pepper
2 C. Head Country Bar-B-Q sauce, Original
1/2 C. of your favorite light beer (you can use hard cider as well to make this recipe gluten free)

COOKING INSTRUCTIONS

Combine onion, chipotle peppers, paprika, 1-1/2 C. Bar-B-Q sauce, the beer, and a pinch of salt and pepper. Nestle chicken in the Beer Can BBQ mixture.

Cover and cook on low for 6 hours, or on high for 3-4 hours. Remove chicken from slow cooker. Shred chicken with two forks. Stir in remaining Bar-B-Q sauce. You can mix in some of the cooking liquid left in the slow cooker, too.

Use as filling for tacos, taquitos, quesadillas—the sky is the limit. Enjoy!
