Skillet Sweet Potatoes

We love these sweet potatoes as a side dish to everything from burgers and fried chicken to lettuce wraps and roasted turkey. Cooking them in a big, heavy cast iron skillet allows the potatoes to caramelize, giving them a delicious crust that’s the perfect mix of sweet and savory.

INGREDIENTS

2 cups diced sweet potatoes (~ 2 medium sweet potatoes)
1/2 yellow onion, diced
2 tbsp coconut oil or vegetable oil, canola oil
2 tbsp Head Country Championship Seasoning, Sweet and Spicy

COOKING INSTRUCTIONS

Warm dry skillet on stove on medium heat. Add cooking oil.

Once the skillet begins to smoke, add the sweet potatoes and diced yellow onion. Stir until the potatoes are coated with oil. Season liberally with Head Country Championship Seasoning.

Turn the heat to high. Let skillet sit untouched for 4 minutes. The potatoes will begin to caramelize on the outside. Stir potatoes.

Potatoes are done when slightly brown on the outside and fork tender. Enjoy!
