Raspberry Chipotle Salmon Bowls

INGREDIENTS

(4-6 ounce) salmon filets
1/4 cup extra virgin olive oil
4 tablespoons of Head Country Championship Seasoning, Sweet & Spicy
Plenty of Head Country Bar-B-Q Sauce, Raspberry Chipotle

MANGO SALSA
1 1/2 cups diced mango
1 avocado, cubed
1-2 jalapeños, seeded and chopped
1/2 cup cilantro, chopped
1/2 cup fresh basil, chopped
2 tablespoons lime juice

COOKING INSTRUCTIONS

1. Preheat the oven or airfryer to 450° F.
2. On a baking sheet, rub the salmon with Head Country Championship Seasoning, Sweet & Spicy.  Arrange in a single layer. Roast 12-18 minutes or until the fish is cooked to your liking.
4. To make the salsa. Combine all ingredients in a bowl.
5. Serve the salmon over bowls of rice. Liberally drizzle the Head Country Bar-B-Q Sauce, Raspberry Chipotle the salmon and top with basil or cilantro.
