Grilled Portobello Pepperoni Pizzas


6 portobello caps, stems removed, washed and dried
2 Tbsp. olive oil
1 Tbsp. Italian seasoning
1 tsp. Head Country Championship Seasoning, High Plains Heat
1 C. pizza sauce
2 C. mozzarella, shredded
Small pepperoni
Head Country Sugar Free BBQ sauce

Preheat oven to broil. In a small bowl combine oil, Italian seasoning, and Head Country Championship Seasoning in High Plains Heat. Brush all sides of the mushroom caps with the oil mixture.

Place each mushroom cap-side down on a large baking sheet. Broil for 3-5 minutes, or until beginning to crisp on the edges.

Fill each cap with pizza sauce. Top with mozzarella. Add desired amount of pepperoni. Top with another sprinkling of mozzarella, being sure not to bury the pepperoni completely.

Return mushrooms to the oven and broil for 3-5 minutes, or until cheese is bubbling and beginning to brown. Top with drizzles of Sugar Free BBQ sauce. Enjoy!
