Pineapple Chicken Bowl

  1. Start by halving your pineapple vertically and then removing the fruit and core front the rind. Cube all removed pineapple. Using a spoon to scrap any remaining fruit. Make sure to reserve any juice.
  2. Next you want to cut your red and green onions and jalapeño into thin slices and chop your cilantro. Don’t forget to halve your lime.
  3.  Preheat your outdoor griddle to medium heat. Meanwhile cube and season your chicken and veggies with Head Country Championship Seasoning – The Original.
  4. With some olive oil, add your red onion and jalapeño and chicken to the griddle.
  5. After chicken is fully cooked add lime juice, reserved pineapple juice, and Head Country The Original Bar-B-Q Sauce. Remove once chicken and sauce is fully incorporated.
  6. Serve in empty pineapple rinds and top with green onions, cilantro and sesame seeds.
