Oven Roasted BBQ Pepitas (Pumpkin Seeds)

One of our favorite things about fall? Carving pumpkins. We’ve never tossed away the pumpkin seeds (also called pepitas) if we could help it. Instead, we season ’em up and roast them for one of our favorite snacks of the season.

COOKING INSTRUCTIONS

Wash seeds to remove all pumpkin flesh. Add seeds in a single layer to a paper-towel lined baking sheet and allow to completely dry, about 1 hour. You can also dry them in a low oven—about 200 degrees F—on an unlined rimmed baking sheet. Meanwhile, heat oven to 325 degrees F.

In a large bowl, combine dried seeds with canola oil. Add Championship Seasonings to taste, starting with a teaspoon of each and building from there.

Add oiled, seasoned seeds to an unlined rimmed baking sheet. Roast until crispy and golden, 25-30 mins. Serve immediately and store completely cooled leftovers in an airtight container at room temperature. Enjoy!
