Leftover BBQ Chicken Keto Taco Bowls

Just because you’re watching carbs or sugar doesn’t mean you’re out of luck on taco night. These keto taco bowls combine the BBQ you couldn’t quite get through over the weekend with a cilantro-lime cauliflower rice. It’s bold and balanced, like our Sugar Free BBQ sauce.

INGREDIENTS

Per serving:
1 c. cauliflower rice
1/2 to 1 c. leftover BBQ chicken, cubed or shredded, reheated
1/4 c. shredded cheese
Red onion, sliced
1/2 Tbsp. cilantro, finely chopped
Slice of lime
Head Country Bar-B-Q Sauce, Sugar Free

COOKING INSTRUCTIONS

Cook cauliflower rice according to package directions.

Add cooked cauliflower rice to a serving bowl. Top with BBQ meat, cheese, onion, cilantro, and the juice from one slice of lime. Drizzle with Head Country Sugar Free BBQ sauce. Serve, and enjoy!

These taco bowls can be served with any kind of BBQ meat—pulled pork, brisket, ribs, you name it.
