2 Tbsp. olive oil
1 onion, chopped
3 cloves garlic, minced
2 pounds boneless, skinless chicken thighs
Head Country Championship Seasoning, Original
1 bell pepper, chopped
Rotel, 1 can
8 cups chicken broth or stock, low-sodium
1 8oz pack cream cheese
1 c. Head Country Bar-B-Q sauce, Sugar Free
Small bunch of cilantro, chopped
8 oz. colbyjack cheese, shredded
red onion, roughly chopped
1-2 avocados, cubed
Low or Hi in slow cooker
Add olive oil, onion, garlic, chicken thighs, Head Country Championship Seasoning, bell pepper, Rotel, and chicken broth or stock to a large slow cooker.
Cook on high 4 hours, or on low for 6 hours. Add cream cheese, Head Country Bar-B-Q sauce, and colby jack cheese, stirring to melt and combine.
Divide soup between serving bowls and top with cilantro, red onion, cubed avocado, and lime wedges. Enjoy!
